Ingredients

1 cup medium-grain rice
1 3/4 cups coconut milk
1 tsp vanilla paste or extract
3 tbsp sugar
2 cups milk
2 None strips of lemon peel
None None brown sugar, for sprinkling
Preparation

Preheat oven to 300\u00b0F. Mix rice, coconut milk, vanilla paste and sugar in a shallow ovenproof dish. Mix in milk and add lemon peel. Cook for about 1 hour until the rice has nearly absorbed all the milk, but is still creamy.
Transfer rice to 4-6 ovenproof ramekins, smoothing the top. Sprinkle generously with brown sugar then glaze under a hot broiler. Serve hot or cool before serving.
