Ingredients

1 lb pumpkin, peeled, cubed
1 tbsp olive oil
2 None sheets frozen puff pastry, thawed
1/2 cup tomato sauce
1 cup grated mozzarella
1 cup cherry tomatoes
1 None red pepper, seeded, finely chopped
1 cup baby arugula
Preparation

Preheat oven to 400\u00b0F.
Toss pumpkin with oil in a baking dish. Bake for 25-30 minutes until tender. Set aside.
Meanwhile, halfway through cooking pumpkin, lightly grease 2 pizza trays. Cut an 8 inch round from each pastry sheet. Place on prepared trays. Prick pastry with a fork and bake for 10 minutes.
Spread each dough round with tomato sauce. Sprinkle with half the cheese. Top with tomatoes, pepper and pumpkin. Sprinkle with remaining cheese.
Bake for 10-15 minutes until golden and the bases are crisp. Top with arugula. Cut into wedges to serve.
