Smoked Salmon And Goat Cheese French Toast - cooking recipe

Ingredients
    1 None ciabatta loaf
    2 None large eggs
    1/2 cup milk
    2 tbsp butter
    1 None lemon, zested, juiced
    2 tbsp olive oil
    2 tbsp chopped toasted hazelnuts
    1 None avocado, cut into wedges
    3 cups baby arugula
    3 oz goat cheese, crumbled
    100 g smoked salmon slices, halved
Preparation
    Trim and discard ends of ciabatta loaf. Cut into eight 1/2-inch-thick slices. Use a 3-inch cutter to cut circles from each slice. Whisk together eggs and milk in a bowl. Melt butter in a large skillet on medium heat.
    Dip ciabatta rounds into egg mixture, allowing excess to drain off. Cook in batches for 1-2 mins each side until lightly golden.
    Combine lemon juice, olive oil and chopped hazelnuts in a small bowl; set aside.
    Arrange avocado, argula, and a round of toast on each serving plate. Top toast with goat cheese, salmon, and lemon zest. Drizzle with hazelnut mixture; season and serve.
