Rich Beef Casserole - cooking recipe

1 1/2 lb beef, diced
1 tbsp all-purpose flour
1 tbsp olive oil
8 None pearl onions, peeled
2 None carrots, thickly sliced
1 cup red wine
1 cup beef stock
2 tbsp tomato paste
2-3 sprigs fresh thyme
1 None bay leaf
1 lb baby potatoes
1/2 lb small button mushrooms
None None chopped fresh parsley, to serve
None None steamed green beans (optional), to serve
Preparation

Preheat oven to 350\u00b0F. Toss together beef and flour.
Heat olive oil in a large Dutch oven over high heat. Working in batches, cook beef for 3-5 mins, until browned. Add onions and carrots. Cook for 5 mins, until golden brown. Add wine, stock, tomato paste and herbs. Season to taste. Bring to a boil, cover then transfer to oven for 1 hour.
Add potatoes and mushrooms. Cook for another 30 mins, until beef is very tender. Sprinkle with parsley and serve with steamed green beans, if desired.
