Cilantro Hummus With Fried Pumpkin Seeds - cooking recipe

Ingredients
    14 oz can chickpeas, rinsed, drained
    1/2 oz loosely packed cilantro leaves, plus extra, to serve
    1/4 cup lemon juice
    1 tbsp tahini paste
    1 clove garlic, crushed
    2 tbsp extra virgin olive oil
    2 tbsp pumpkin seeds
    None None red pepper, to serve
    None None cucumber slices, to serve
Preparation
    For the hummus, add chickpeas, cilantro, lemon juice, tahini and garlic to a food processor. Pulse to form a paste. With motor running, add oil in a thin, steady stream. Keep running until smooth. Season to taste.
    Heat a frying pan on medium. Add seeds and cook 2-3 mins, shaking pan occasionally, until seeds are popped and lightly toasted.
    Transfer hummus to a shallow serving dish and sprinkle with seeds. Garnish with extra cilantro leaves and serve with sliced vegetables.
