Tomato And Bacon Crostini - cooking recipe
Ingredients

2 None tomatoes, finely chopped
1 tbsp red wine vinegar or sherry vinegar
1/3 cup vegetable or olive oil
3 slices bacon
12 slices baguette
1 clove garlic, halved
2 tbsp fresh thyme leaves, chopped
Preparation

Combine tomato, vinegar and 1/2 the oil. Season and set aside.
Preheat broiler. Broil bacon, turning once, for 5 mins or until crisp. Transfer to paper towels then chop coarsely. Set aside.
Drizzle sliced baguette with remaining oil. Season. Broil for 2 mins per side, or until golden. Rub 1 side of each toast with garlic. Top with tomato mixture and bacon. Sprinkle with thyme leaves and serve.
