Lemon Curd - cooking recipe

Ingredients
    4 None eggs, at room temperature, lightly beaten
    3/4 cup sugar
    1/2 cup lemon juice
    2 tsp lemon zest
    1/2 cup butter, chopped
Preparation
    Whisk eggs and sugar over a double boiler for 1-2 mins, until sugar dissolves. Stir in lemon juice and zest. Whisk in butter until emulsified then continue to whisk for 15-20 mins, until smooth and mixture coats the back of a wooden spoon.
