Ingredients

1/2 cup granulated sugar
1/2 cup orange juice
5 pieces orange peel
1 inch fresh ginger, peeled, cut into matchsticks
1/4 None seedless watermelon, flesh scooped with a melon baller
1/2 None honeydew melon, flesh scooped with a melon baller
1/2 None cantaloupe, flesh scooped with a melon baller
2 tbsp fresh mint leaves, to garnish
Preparation

Combine sugar, orange juice, orange peel and ginger in a small saucepan. Cook over medium heat until sugar dissolves. Bring to a boil, reduce heat and simmer, uncovered, for 5-7 mins, or until thickened slightly. Let cool.
Toss melon balls with cooled ginger syrup. Cover with plastic wrap and chill for 1 hour, or until ready to serve.
Serve garnished with mint.
