Lentil Soup - cooking recipe

Ingredients
    1 tbsp olive oil
    4 slices bacon, coarsely chopped
    1 medium onion, finely chopped
    1 medium carrot, finely chopped
    1 stick celery, finely chopped
    1 cup dried brown lentils
    1 can (14 oz) diced tomatoes
    4 cups chicken stock
    1 None bay leaf
    2 tbsp coarsely chopped fresh flat-leaf parsley
Preparation
    Heat oil in large saucepan on medium heat. Cook bacon, onion, carrot and celery, stirring, until onion softens.
    Add lentils, tomatoes, stock and bay leaf; bring to the boil. Reduce heat to low; simmer, covered, for 30 mins. Season to taste.
    Discard bay leaf. Serve soup sprinkled with parsley.
