Braised Vegetables With Tofu - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None onion, peeled and finely diced
    1 clove garlic, peeled and finely diced
    1 - 15 oz can chopped tomatoes
    1 pinch paprika
    1-2 tbsp white wine vinegar
    1-2 tsp sugar
    1/2 bunch fresh parsley, finely chopped
    1 lb broccoli, divided into florets
    2/3 lb carrots, peeled and sliced
    1 None small yellow pepper, deseeded and sliced
    1 None small red pepper, deseeded and sliced
    5.25 oz tofu, cubed
    1/3 cup sliced almonds
Preparation
    Preheat oven to 400\u00b0F. Heat oil in a pan and saute onion and garlic for 5 mins. Add tomatoes and season. Add paprika, vinegar and sugar then add chopped parsley. Set aside.
    Meanwhile, blanch broccoli and carrots for 5 mins in boiling salted water. Drain then mix with tofu and tomato sauce. Transfer to a greased baking dish. Sprinkle with sliced almonds and bake for about 1 hour.
