Gluten Free Apple Tarts - cooking recipe

1/4 cup gluten-free all-purpose flour
2 tbsp powdered sugar + 1 tsp, to dust
1/2 cup butter, cold, cubed + 2 tbsp, melted
1 None egg
12 oz dried mixed fruit, chopped
2/3 cup brown sugar
1 None green apple, peeled, cored and grated
1 tsp pumpkin pie spice
1 tsp ground cinnamon
Preparation

Pulse flour and powdered sugar in a food processor until combined. Add cold, cubed butter and pulse until mixture resembles fine crumbs. Add egg and 1/2 cup iced water and process until mixture just comes together into a ball. Turn out onto a piece of plastic wrap, bring together into a smooth ball then flatten. Wrap in plastic wrap and chill for 20 mins.
Meanwhile, combine mixed fruit, sugar, apple, spices and melted butter. Cover with plastic wrap and set aside, stirring occasionally, for 20 mins.
Preheat oven to 350\u00b0F. Grease 2 - 12 cup muffin pans. Roll chilled dough to 1/8 inch thick and cut out 24 - 2 3/4 inch fluted discs and 24 - 2 inch fluted discs. Use larger discs to line prepared pans. Distribute fruit mixture between tart shells and press down lightly. Place smaller discs in the center of tarts and bake for 25 mins, or until lightly browned and crisp. Let cool 10 mins in pan then transfer to a wire rack to cool completely.
Serve dusted with powdered sugar.
