Chocolate And Coconut Brownies - cooking recipe

Ingredients
    1 cup creme fraiche or sour cream
    1 1/2 cups sugar
    7 oz coconut flakes
    16 oz butter
    12 oz plain chocolate, chopped
    8 None medium eggs
    1 tsp vanilla extract
    1 1/8 cup brown sugar
    1 cup all-purpose flour
    1 tsp baking soda
    2 tbsp cocoa powder
Preparation
    Mix the creme fraiche or sour cream with 1/3 cup of the sugar to create a sweet cream mix, then add the coconut flakes. Using a bowl over a pan of hot water, melt the butter and the chocolate, stir and allow to cool. Meanwhile, beat the eggs and the vanilla extract in a bowl. Add the brown sugar and the rest of the sugar and beat for about a minute. Stir in the melted chocolate. Sift the flour, baking soda and cocoa and fold into the mixture.
    Grease a 12 x 15 inch pan and dust with flour. Pour the batter into the tray, distributing it evenly. Using a spoon, place dollops of the coconut cream mixture on top. Bake in a preheated oven at 325\u00b0F for 35-40 mins. The brownie should be cooked, but still moist. Allow to cool, then cut into pieces and serve.
