Ham, Cheese And Avocado Sushi Rolls - cooking recipe

Ingredients
    10.5 oz sushi rice, rinsed, drained
    2 tbsp rice wine vinegar
    1/2 tbsp white sesame seeds, toasted
    2 tsp black sesame seeds, toasted
    4 sheets nori
    1 None small avocado, peeled, pitted, mashed
    12 slices ham
    1 None small carrot, grated
    2 oz Cheddar cheese, cut into 1/8 inch-thick strips
Preparation
    Bring rice and 1 2/3 cups water to a boil. Reduce heat to low and simmer, covered, for 12 mins, or until water has been absorbed and holes appear on the surface. Remove from heat. Let stand, covered, for 10 mins. Fluff with a fork. Spread rice out over a large, shallow dish. Stir with a spatula to break up any lumps. Gradually fold in vinegar. Cover with a damp tea towel and let cool.
    Combine sesame seeds in a bowl. Set aside.
    For each roll, place 1 sheet of nori, shiny-side down, on a bamboo sushi mat. Using damp fingers, spread 1/4 of rice over nori. Sprinkle with 2 tsp sesame seeds. Cover rice with plastic wrap then flip over so nori faces up. Slide mat under plastic wrap. Spread 1/4 of avocado over nori. Add 1/4 of ham, carrot and cheese along edges closest to you. Roll up firmly, using mat as a guide. Discard plastic wrap.
    Using a sharp knife, cut sushi into 6 pieces. Repeat with remaining ingredients to make 4 rolls (24 pieces) total.
