Cheddar Soup With Celeriac And Apple - cooking recipe

Ingredients
    1 None large onion, peeled and finely chopped
    25 g butter
    600 g celeriac, peeled and cut into small cubes
    500 g potatoes, peeled and cut into small cubes
    1 None apple, peeled and cut into small cubes
    1 litre chicken bouillon
    150 g cheddar cheese, broken into pieces (grate some for garnish)
    1/4 bunch parsley, chopped
Preparation
    Heat butter in a saucepan with a tight fitting lid. Add onion and sweat for 4 mins until soft. Add celeriac and potatoes, cover and steam for 10 mins, stirring occasionally. Add stock and apple, bring to a boil then simmer for 15 mins. Season to taste. Add cheese and melt. Serve sprinkled with parsley and grated cheese.
