Ingredients

1 lb dried peaches, coarsely chopped, soaked in cold water for 1 hour, drained
1 cup raisins + 2 tbsp
2 tbsp lemon zest
1 cup white wine vinegar
2/3 cup granulated sugar
5 cloves garlic, chopped
2 None small red chilies, deseeded, thinly sliced
1 tsp ground cumin
1 tbsp ground cardamom
1 tsp ground cinnamon
Preparation

Combine reconstituted peaches or apples, 1 2/3 cups water, raisins, lemon zest and vinegar in a large, heavy-bottomed saucepan over medium heat. Bring to a boil, reduce heat and simmer, uncovered, for 10 mins, or until fruit is tender.
Add remaining ingredients and 2 tsp salt. Simmer, stirring often, for 30-40 mins, or until liquid reduces and mixture thickens.
