Fruity Couscous - cooking recipe

Ingredients
    3 cups chicken stock
    3 cups couscous
    1 medium red onion, finely chopped
    2/3 cup finely chopped dried apricots
    7 oz red seedless grapes, halved
    1/2 cup dried currants
    1/2 cup sliced almonds, toasted
    1/3 cup coarsely chopped fresh flat-leaf parsley
    None None FOR THE LEMON DRESSING
    1/3 cup lemon juice
    2 tbsp olive oil
    1 tsp Dijon mustard
Preparation
    Bring stock to the boil in medium saucepan.
    Combine couscous and hot stock in large heatproof bowl; cover. Let stand about 5 mins or until liquid is absorbed, fluffing with fork occasionally.
    For the lemon dressing, whisk all ingredients in a small bowl. Season to taste.
    Add remaining ingredients to couscous. Drizzle with dressing; toss gently to combine.
