Apricots And Raspberries With Oat Brittle And Lime Yogurt - cooking recipe

Ingredients
    1/4 cup sugar
    2/3 cup oats
    1 1/2 cups raspberries, half of them halved
    1 1/2 lbs apricots, pitted and cut into strips
    1 None lime, finely zested and juiced
    3-4 tsp honey
    2/3 cup full fat yogurt
    1/4 cup powdered sugar
Preparation
    Caramelize the sugar by heating it in a dry pan until golden in color. Add the oats and mix so the oats are coated with the caramelized sugar. Remove from the pan and spread into a thin layer on a sheet of aluminium foil and allow to cool.
    Mix the raspberries and apricots with 3 tablespoons of lime juice and the honey and leave to marinate for about 5 mins.
    Meanwhile, in another bowl mix the yogurt with the rest of the lime juice, a teaspoon of the zest and the powdered sugar.
    To serve, put the apricot and raspberries in individual bowls and crumble the oat brittle on top. Drizzle over a little of the lime yogurt and serve with the rest of the yogurt on the side. Garnish with the remaining zest.
