Taco Fiesta - cooking recipe
Ingredients

None None FOR THE GUACAMOLE
2 None ripe avocados, pitted and peeled
2 tbsp lime juice
None None FOR THE SALSA
3 None tomatoes, finely chopped
1/2 None red onion, finely chopped
1/2 cup cilantro leaves, finely chopped
2 tbsp lime juice
1 None long red chili pepper, seeded and finely chopped
None None FOR THE TACOS
2 tbsp olive oil
1 lb beef sirloin steak
1 pkg (1 oz) taco seasoning mix
11 oz firm boneless white fish fillets
12 None taco shells
2 cups shredded iceberg lettuce
2 cups grated Cheddar cheese
1/2 cup sour cream
None None Tabasco sauce, to serve
Preparation

For the guacamole, place avocado in a medium bowl. Mash well with lime juice and season to taste.
For the salsa, combine tomato, onion, cilantro, lime juice and chili pepper in a medium bowl. Season to taste.
Drizzle 1 tbsp of the oil over beef and sprinkle with 1/2 of the taco seasoning. Repeat with fish in a second bowl, using remaining oil and seasoning.
Preheat the grill to medium-high. Grill beef 3-4 mins each side for medium, or until cooked to desired doneness. Let stand, loosely covered with foil, for 5 mins.
Grill or cook fish in heated skillet 1-2 mins each side, until golden and just cooked through.
Meanwhile, heat taco shells according to package directions.
Thinly slice beef. Arrange beef and fish on platter with salsa, guacamole and taco shells. Accompany with lettuce, cheese, sour cream and tabasco sauce for everyone to build their own favorite taco.
