Ingredients
-
1/2 cube fresh yeast (about 21g)
50 g sugar + 2 tbsp + 1 tsp
60 g butter or margarine
100 ml milk
250 g flour
1 None medium egg
1/4 tsp vanilla extract
600 g apples, peeled and cored
2-3 tbsp lemon juice
250 g chunky cranberry sauce
2 tbsp sliced almonds
250 g soured cream
1 tsp ground cinnamon
None None icing sugar, for dusting
Preparation
-
Put the yeast in a small bowl with 2 tablespoons of sugar and 1/4 cup water and mix until dissolved. Meanwhile, gently melt 2 tbsp of the butter in a pan then add the milk. In a large bowl, mix the flour, egg, vanilla extract, 1 tsp sugar, and a pinch of salt. Slowly add the warm milk, then the yeast, mixing to create a smooth dough (you can use a food processor with a dough hook for this). Cover the dough and let rise in a warm place for about 30 mins.
Meanwhile, drizzle the sliced apples with lemon juice. Heat 2 tbsp butter in a non-stick pan and sprinkle with 1/4 cup of sugar. After 1-2 mins the mixture will begin to caramelize. Toss the apples in the caramel, then remove from the pan and allow to cool.
Preheat oven to 400\u00b0F. Lift the dough onto a floured work surface, knead briefly, then roll out into an 11 inch circle. Lift the dough onto a baking sheet lined with baking paper. Spread the cranberry sauce over the dough, then distribute the apple slices on top. Let rest for 5 mins, then bake for 20-25 mins.
Meanwhile toast the almonds in a pan until they are golden and fragrant. In a bowl, mix the sour cream with the cinnamon and a 1 tsp of sugar. Remove the pizza from the oven and sprinkle the almonds over the top, then dust with powdered sugar. Serve hot with the cinnamon cream on the side.
