Chicken Sausages With Sage And Onion Gravy - cooking recipe

Ingredients
    2 tbsp olive oil
    8 None chicken sausages
    1 pkg (24 oz) refrigerated mashed potatoes
    7 oz arugula leaves
    None None FOR THE SAGE AND ONION GRAVY
    1 clove garlic, crushed
    2 medium onions, thinly sliced
    1 tbsp flour
    1 cup chicken stock
    8 None fresh sage leaves, torn
    1/3 cup apple cider
Preparation
    For the sage and onion gravy, heat oil in a medium saucepan on medium heat. Cook onion, stirring, for 15 mins until caramelized. Add garlic; cook until fragrant. Add flour, cook, stirring, 1 min. Gradually add stock, then sage leaves and cider. Simmer, uncovered, about 10 mins or until gravy is thickened slightly. Season to taste.
    Heat oil in a large skillet on medium heat. Cook sausages, turning, for 10 mins or until cooked through.
    Microwave mashed potato according to package directions.
    Divide sausages among plates. Top with sage and onion gravy. Serve with arugula and mashed potato.
