Ingredients

2 cups milk
2 tbsp butter
5 tbsp granulated sugar
1 tsp vanilla extract
1/2 cup semolina
1 tsp cornstarch
1/3 cup orange juice
4 tsp orange liqueur
4 None oranges, peeled and segmented
1 None egg, separated
5 tbsp heavy cream
4 tbsp dark chocolate shavings
Preparation

Slowly bring milk, butter, 2 tbsp sugar and vanilla extract to a boil. Remove from heat and slowly whisk in semolina. Return to heat, bring to a boil, stirring, and cook for 1 min. Remove from heat, cover and set aside for 5 mins.
Meanwhile, mix cornstarch with 1 tbsp orange juice until smooth. Heat remaining juice with liqueur and 2 tbsp sugar, add cornstarch slurry and simmer, stirring, for 1 min until thickened. Fold in orange segments and set aside.
Whisk egg white until stiff then add remaining sugar and a pinch of salt. Whisk egg yolk and cream then add to semolina. Fold in whipped egg white then divide between 4 serving bowls. Garnish with orange segments, syrup and chocolate shavings.
