Apple, Pear And Vanilla Sponge Cake Pudding - cooking recipe

Ingredients
    3 None green apples, peeled, cored, chopped into 3/4 inch pieces
    3 None pears, peeled, cored, chopped into 3/4 inch pieces
    3/4 cup granulated sugar
    3 None medium eggs
    1 tsp vanilla extract
    1 cup self-rising flour
    1 tsp pumpkin pie spice
    None None heavy cream, to serve
Preparation
    Preheat oven to 400\u00b0F. Lightly grease 8 (7 oz) ramekins.
    Combine apples and pears. Sprinkle with 2 tbsp sugar and toss to coat. Distribute between ramekins and bake for 35-40 mins, until tender. Let cool. Reduce heat to 350\u00b0F.
    Meanwhile, in a stand mixer, whip eggs and vanilla until fluffy. Add remaining sugar, 1 tbsp at a time, beating until thick and creamy and sugar is dissolved. Add vanilla extract and mix until combined. Sift flour and spice mix over egg mixture then fold in gently. Distribute between ramekins and bake for 15-20 mins, until a skewer inserted in the center comes out clean.
    Serve hot with heavy cream.
