Salmon, Pilaf And Dill Sauce - cooking recipe
Ingredients

2 tbsp olive oil
1 medium onion, finely chopped
1 1/2 cups basmati rice
3 cups fish stock or water
2 tbsp chopped dill
4 None salmon fillets
1 small onion, sliced
2 tsp olive oil
1 cup Greek-style yogurt
1 tbsp finely chopped dill
1 clove garlic, crushed
Preparation

Heat oil in a medium saucepan on high heat. Saute onion for 3 mins until softened. Stir in rice and cook for 1 min.
Add stock or water and bring to a boil, stirring occasionally. Reduce heat to medium-low. Simmer, covered, for 15 mins until liquid has evaporated and rice is cooked. Stir in dill and season to taste.
Place salmon fillets in a shallow microwave-safe dish. Season to taste and top with onion slices. Drizzle with oil. Cover with plastic wrap.
Microwave on high (100% power) for 4-5 mins or until fish flakes when tested.
Meanwhile, for the dill sauce, combine yogurt, dill and garlic in a small bowl. Season to taste. Serve salmon with pilaf and dill sauce.
