Lemongrass Chicken Sliders With Avocado Salsa - cooking recipe

1 tbsp vegetable oil
1 stalk lemongrass, white part only, finely chopped
3 cloves garlic, finely chopped
1 None spring onion, finely sliced
1 None small red chili, deseeded, finely chopped
2 tsp grated palm sugar or brown sugar
1 tbsp fish sauce
4 None kaffir lime leaves, finely chopped
1 lb ground chicken
1 None avocado, pitted, peeled, chopped
1 None cucumber, diced
1 tbsp fresh cilantro leaves, finely chopped
1 tbsp lime juice
2 tbsp extra virgin olive oil
8 None burger buns, lightly toasted
1 head lettuce
None None hot pepper sauce, to serve
None None mayonnaise, to serve
Preparation

Combine oil, lemongrass, garlic, spring onion, chili, sugar, fish sauce, lime leaves and ground chicken. Form into 8 patties. Set aside.
For the avocado salad, combine avocado, cucumber, cilantro, lime juice and olive oil. Set aside.
Heat a frying pan over medium-high heat. Cook chicken patties for 3-4 mins per side. Arrange on bottom burger buns with lettuce leaves and avocado salsa. Sandwich with top buns. Serve with hot pepper sauce and mayonnaise on the side.
