Lentil Samosas - cooking recipe

Ingredients
    2 tsp oil
    1 None onion, chopped
    2 stalks celery, diced
    1 None large carrot, diced
    2 cloves garlic, minced
    1 tsp curry powder
    1 (13.5 oz) can diced tomatoes
    1/2 cup vegetable stock
    7 oz red lentils, cooked, drained
    4 sheets frozen puff pastry, thawed, each cut into 4 squares
    3.5 oz Cheddar cheese, grated
    1 None egg, lightly beaten
    None None salad, to serve
Preparation
    Preheat oven to 400\u00b0F. Line 2 baking trays with parchment paper.
    Heat oil in a frying pan over high heat. Saute onion for 2-3 mins, until tender. Add celery, carrot and garlic. Cook for 1-2 mins. Add curry powder and cook, stirring, for 1 min, until fragrant. Add tomatoes and vegetable stock. Simmer for 10 mins, or until vegetables are tender. Add lentils and let cool.
    Divide lentil mixture and cheese between squares. Fold over to form triangles, pressing edges together to enclose filling. Arrange on prepared trays and brush with egg. Bake for 25-30 mins, until puffed and golden brown. Serve with salad.
