Mixed Greens With Rye Crusted Cheese Balls - cooking recipe

Ingredients
    3.5 oz dark rye bread
    9 oz cream cheese
    2 tbsp heavy cream
    2 None green onions, finely sliced
    1/2 bunch fresh chives, chopped
    6 sprigs fresh flat leaf parsley, chopped
    3 tbsp granulated sugar
    1/2 cup carrot juice
    1/2 cup orange juice
    2 tbsp white wine vinegar
    1 tbsp honey
    5 tbsp olive oil
    7 oz baby mixed greens
    5 oz carrot, peeled, cut into matchsticks
Preparation
    In a food processor, pulse rye bread to fine breadcrumbs. Toast breadcrumbs in a dry frying pan for 2 mins, tossing. Set aside to cool.
    Meanwhile, combine cream cheese and cream. Fold in green onions and herbs. Season then roll into 16 balls. Roll in toasted breadcrumbs. Chill.
    To make the dressing, heat 2 tbsp water and sugar. Simmer for 3-4 mins, until caramelized. Gradually whisk in carrot juice and orange juice. Simmer for 10 mins to reduce. Let cool. Whisk in vinegar, honey and oil. Season.
    Toss together baby greens and carrot strips. Distribute between 4 serving plates. Top with cheese balls and drizzle with dressing. Serve extra dressing on the side.
