Herbed Fish Packets With And Roasted Vegetables - cooking recipe

Ingredients
    14 oz baby potatoes, halved
    2 large zucchini, quartered lengthwise
    1 medium red pepper, seeded and thickly sliced
    3 tbsp butter, chopped
    1 tbsp olive oil
    4 None cod fillets or other thick white fish fillets
    1 medium lemon, thinly sliced
    1 tbsp finely chopped fresh chives
    2 tsp finely chopped fresh dill
    1 tsp finely grated lemon peel
    None None Chives and dill, for garnish
Preparation
    Preheat the oven to 450\u00b0F. Lightly grease a large baking dish.
    Microwave potatoes on high 4 to 5 mins or until just tender. Place potatoes, zucchini and pepper in prepared dish. Dot potatoes with 1 tbsp of the butter and brush zucchini and pepper with oil. Season. Roast for 20 mins.
    Meanwhile, place four 12-inch square sheets of parchment paper on a work surface. Place fish fillets in the center of pieces of paper. Top with lemon slices, herbs, lemon peel and remaining 2 tbsp butter. Season. Bring 2 sides of the paper together and double fold. Fold the sides and tuck underneath the fish to create a sealed packet. Place on a baking sheet.
    Reduce the oven temperature to 425\u00b0F. Bake the fish packets for about 10 mins or until cooked as desired. Serve the fish with roasted vegetables. Sprinkle with chopped chives and dill sprigs, if desired.
