Onion Tart With Arugula And Prosciutto - cooking recipe

1 tbsp olive oil
2 tbsp butter, chopped
4 None red onions, thinly sliced
1 None lemon, peel finely grated and lemon juiced
5 sprigs thyme
1/4 cup packed brown sugar
1/2 cup red wine
1 sheet frozen puff pastry, thawed
1 None egg yolk, beaten
1 cup cherry tomatoes
1 cup crumbled feta cheese
2 slices prosciutto, grilled, torn
None None Baby arugula, to serve
Preparation

Preheat the oven to 425\u00b0F. Line a baking pan with parchment paper.
Heat oil and butter in a large skillet on medium heat. Add onions, lemon peel and juice, and thyme. Cook 8-10 mins until onion is tender. Add sugar and wine. Reduce heat to low; simmer 10-15 mins until caramelized. Set aside to cool.
Place pastry on prepared pan. Score a 1/4 inch border with a sharp knife. Brush border with egg yolk. Use a fork to prick pastry. Spread caramelized onions on pastry.
Cut cherry tomatoes into quarters, without cutting all the way through, so they resemble flowers. Place on onions. Sprinkle with feta.
Bake 12-15 mins or until pastry is golden. Serve tart topped with prosciutto and arugula.
