Green Salad With Shrimp And Oranges - cooking recipe

Ingredients
    2 tbsp sugar
    8 tbsp fish sauce
    6 tbsp lime juice
    2 stalks lemongrass, finely chopped
    1 None red chili, deseeded and finely chopped
    2 small cloves garlic, peeled and finely chopped
    12 None large raw shrimp, heads removed, de-veined and peeled
    4 None small romaine lettuce hearts, torn into bite-sized pieces
    2 None red onions, peeled and sliced into strips
    2/3 lbs cherry tomatoes, quartered
    2 None oranges, peeled, pith and membrane removed
Preparation
    To make the dressing, mix the sugar, fish sauce, lime juice and 2 tbsp water in a bowl. Add the lemongrass, chili and garlic and mix well.
    Boil the shrimp in salted water for 2-3 mins, until cooked through. Drain and rinse with cold water.
    In a bowl, mix the lettuce, onions, tomatoes and orange segments. Top with the shrimp and drizzle with the dressing.
