Ingredients

1 (7 oz) Madeira cake, cut into 10 thin slices
3 tbsp strawberry jam
2 None oranges, zested, peeled and cut into segments, plus 4 tbsp orange juice
1/2 lb strawberries, hulled, sliced
4-5 tbsp sherry or rum
18 oz vanilla custard or pudding
5.25 oz white chocolate, broken
1 1/4 cups heavy cream
None None white chocolate curls, to decorate
Preparation

Sandwich cake slices together with strawberry jam. Arrange in the base of a 4 cup serving bowl. Arrange orange segments and strawberries over cake then drizzle with sherry and orange juice. Chill.
Heat 1/2 the custard and chocolate over low heat, stirring, until melted. Remove from heat. Add remaining custard and 1/2 the orange zest. Let cool then chill for 30 mins.
Pour chilled custard over strawberries and oranges. Chill for 1 hour, or until custard is almost firm to the touch.
Whip cream to soft peaks then spoon over custard. Decorate with chocolate curls and remaining orange zest.
