Roast Pork With Sage Potatoes - cooking recipe

5 1/2 lbs boneless pork leg, rind on
4 tbsp olive oil
1 tbsp sea salt flakes
2 1/2 lbs potatoes, quartered
2 tbsp fresh sage leaves
2 tbsp fresh rosemary leaves

3 large Granny Smith apples, peeled, cored and thickly sliced
1 tsp sugar
None None Pinch of ground cinnamon
Preparation

Preheat the oven to 425\u00b0F. Score pork rind with sharp knife. Rub with half the oil, then the salt. Place in large roasting pan. Roast for 20 mins.
Reduce oven temperature to 350\u00b0F. Roast pork for 2 hours.
Meanwhile, combine potatoes with herbs and remaining oil in large bowl. Place in single layer in baking pan. Roast for 35 mins.
For the applesauce, place apples and 1/4 cup water in medium saucepan. Cook on medium heat, uncovered, for 10 mins, or until apples are soft. Remove pan from heat; stir in sugar and cinnamon.
Let pork stand, covered loosely with foil, for 10 mins before slicing. Serve with sage potatoes and applesauce.
