Stuffed Mushrooms With Herb Cream - cooking recipe

Ingredients
    1 tbsp oil
    9 oz mushrooms, stems removed
    2-3 sprigs fresh parsley, leaves chopped
    1/2 cup sour cream
    1 tbsp milk
    1 None tomato, seeded, diced
    1 pinch cayenne pepper
    None None mixed greens, to garnish
Preparation
    Heat oil in a frying pan. Saute mushrooms for 2 mins. Season then set aside.
    Whisk together sour cream and milk until smooth. Add parsley, cayenne pepper and 2/3 of tomatoes. Fill mushrooms with mixture. Serve garnished with mixed greens and remaining tomatoes.
