Vegetable Calzones - cooking recipe

1 small red pepper, finely chopped
4 None button mushrooms, thinly sliced
1 small onion, finely chopped
1/2 cup drained canned pineapple pieces in juice
1/2 cup grated mozzarella cheese
1 lb pizza dough
1 tbsp tomato paste
1 None egg, lightly beaten
None None Salad greens, to serve
Preparation

Preheat the oven to 400\u00b0F. Lightly dust 2 baking pans with flour. Combine red pepper, mushrooms, onion, pineapple and mozzarella cheese in a large bowl.
Divide pizza dough into 6 equal portions on a floured surface. Use a floured rolling pin to roll out each portion to a 5-inch round.
Spread each round with a little tomato paste, taking care to leave a 3/4-inch border. Top half of each round with vegetable mixture. Brush edges with beaten egg. Fold dough to enclose vegetable filling and pinch edges together to seal. Place on prepared baking pans.
Bake for 20 mins, until lightly browned and cooked through. Serve with salad greens.
