Chicken, Grape And Walnut Salad Sandwiches - cooking recipe

Ingredients
    2/3 cup yogurt/sour cream blend, like Breakstone's
    2 tsp Dijon mustard
    2 tbsp minced mixed fresh herbs, like parsley, tarragon and thyme
    2 None scallions, minced
    2 tsp lemon juice
    2 cups diced herb and garlic rotisserie chicken
    1/4 cup minced celery
    1/2 cup chopped red grapes
    1/4 cup chopped toasted walnuts
    1/4 cup dried cranberries
    8 slices country bread
    8 leaves lettuce
Preparation
    In a large bowl, combine yogurt, mustard, herbs, scallion and lemon juice. Season. Add chicken, celery, grapes, walnuts and cranberries. Toss to combine.
    Arrange 4 slices of bread on a cutting board. Place lettuce leaves on bread. Divide chicken salad evenly between sandwiches. Top with remaining bread.
