Tangy Tomato Salad - cooking recipe

Ingredients
    1 head Boston or Bibb lettuce, leaves separated
    1 cup diced cucumber (with peel)
    2 None large red tomatoes, cut into wedges
    1/4 cup chopped red pepper
    1/4 cup minced red onion
    1/2 cup diced Pepper Jack cheese
    1/2 cup prepared balsamic vinaigrette
    1/4 cup chopped fresh parsley
    1/4 cup chopped fresh basil
    1 None lemon, zested and juiced
Preparation
    Place lettuce leaves on a serving platter. Arrange tomato wedges on the platter to create flower shape.
    In a bowl, combine cucumber, red pepper, red onion and cheese. Spoon mixture into center of tomatoes.
    In a bowl, whisk together vinaigrette, parsley, basil, 2 tablespoons of lemon juice and half teaspoon lime zest. Drizzle over salad just before serving.
