Lemon Poppy Seed Biscuits - cooking recipe

1 1/2 cups (3 sticks) butter, softened
1/2 cup granulated sugar
1/2 cup powdered sugar
1 tsp vanilla extract
4 cups flour
1/4 cup poppy seeds
2/3 cup lemon curd
Preparation

Beat butter, sugars and vanilla extract in a large bowl with an electric mixer until pale and creamy. Stir in sifted flour and poppy seeds in 2 batches. Cover and refrigerate 30 mins.
Preheat the oven to 350\u00b0F. Grease and line baking pans with parchment paper.
Roll dough between sheets of parchment paper until 1/4-inch thick. Using a large heart cutter, cut 32 hearts from dough. Place hearts about 1 1/2 inches apart on prepared pans. Using small heart cutter, cut centers out of 16 large hearts.
Bake whole hearts about 10 mins and the remaining hearts about 8 mins. Cool in pans 2 mins. Remove from pans; cool completely on wire rack.
Spread whole hearts with lemon curd, then top with remaining hearts.
