Lemon Roasted Potatoes - cooking recipe

Ingredients
    3 1/2 lbs Yukon Gold potatoes, peeled and cut into large chunks
    1 tbsp grated lemon peel
    1/3 cup lemon juice
    1/4 cup olive oil
    2 tbsp finely chopped fresh thyme
Preparation
    Preheat the oven to 425\u00b0F. Place potatoes in a large roasting pan and toss with remaining ingredients.
    Roast for 45 mins, turning occasionally, until tender and browned.
