Sausage Curry With Herbed Yogurt - cooking recipe

Ingredients
    1 tbsp oil
    6 None pork sausages
    1 None large onion, thinly sliced
    2 cloves garlic, minced
    1/3 cup korma curry paste
    2 cups chicken stock
    1/2 cup fruit chutney
    1/2 cup cream
    2 None tomatoes, chopped
    2 1/2 cups baby spinach
    None None naan, to serve
    None None Herbed Yogurt
    1/2 cup plain yogurt
    2 tbsp fresh mint, chopped
    1 tbsp fresh cilantro leaves, chopped
Preparation
    Heat oil in a large frying pan over medium heat. Cook sausages for 5-10 mins, turning, until browned. Slice thickly. Add onion and garlic and cook for 4-5 mins, until tender. Add curry paste. Cook, stirring, for 1 min. Add stock, chutney and cream. Simmer for 20 mins. Return sausages to pan along with tomatoes and spinach. Cook for 2-3 mins, until heated through.
    Meanwhile, to make the herbed yogurt, combine yogurt with fresh herbs. Season to taste.
    Serve sausage curry with naan and herbed yogurt.
