Fennel, Red Onion, Grapefruit And Arugula Salad - cooking recipe

Ingredients
    18 oz baby arugula
    1 small bulb fennel, sliced thinly, fronds reserved
    1 None medium red onion, sliced thinly
    2 None medium ruby red grapefruit, segmented
    1 None Persian cucumber, cut into ribbons
    3 tbsp small fresh mint leaves, loosely packed
    -1 None Red Wine Vinegar Mayonnaise
    1 tbsp red wine vinegar
    1 clove garlic, minced
    2 tbsp mayonnaise
Preparation
    Combine arugula, fennel, onion, grapefruit, cucumber and mint on a serving platter. Set aside.
    To make the red wine vinegar mayonnaise, whisk together vinegar, garlic and mayonnaise until combined. Season then drizzle over salad.
    Serve salad sprinkled with fennel fronds.
