Green Curry Fried Rice - cooking recipe
Ingredients

1 tbsp vegetable or peanut oil
4 slices bacon, chopped
7 oz broccoli, cut into small florets
14 oz pumpkin or butternut squash, peeled and finely chopped
3/4 cup canned or frozen corn kernels
1 tbsp store-bought green curry paste
4 cups cooked rice, cold
3 None green onions, chopped
None None Lemon wedges, to serve
Preparation

Heat the oil in a wok or large skillet on medium-high heat. Add the bacon, broccoli, pumpkin and corn; stir-fry for 4-5 mins or until the vegetables have softened.
Add the curry paste and stir-fry for 1 min or until fragrant. Add the rice and toss to combine. Season.
Spoon the rice into serving bowls. Top with green onion. Serve with lemon wedges.
