Baked Cod In Tomato Sauce With Creamy Mashed Potatoes - cooking recipe

Ingredients
    5 tbsp butter, plus extra to grease
    1 3/4 lb potatoes, peeled and chopped
    4 None cod fillet pieces
    4 tsp Dijon mustard
    2 None shallots, peeled and diced
    14.5 oz can, diced tomatoes
    1/3 cup dry white wine
    4 tbsp breadcrumbs
    1/2 cup milk
    pinch None grated nutmeg
    4 tbsp fresh parsley, chopped
Preparation
    Preheat the oven to 400\u00b0F. Grease 1 large or 2 small baking dishes with butter. Bring a large pan of salted water to the boil, add the potatoes and simmer for 15-20 mins until tender.
    Place the cod fillets in the baking dish(es) and brush with mustard. Arrange the shallots around the outside then pour over the diced tomatoes and sprinkle with wine and breadcrumbs. Place dots of butter (2 tbsp) over the top then bake for 15-20 mins until the sauce is bubbling and the cod is cooked.
    Drain the potatoes and leave to steam for 1-2 mins. Pour back into the pan, season then add remaining 3 tbsp butter, the milk and nutmeg. Mash until smooth. Sprinkle with chopped parsley and serve.
