Seared Beef Salad - cooking recipe
Ingredients

1 lb sweet potatoes, peeled and thinly sliced
2 tsp oil
1 lb beef sirloin steak
2 tbsp Madras curry paste
5 oz baby arugula
1/2 None red onion, thinly sliced
1 tbsp red wine vinegar
1 tbsp extra virgin olive oil
None None Crusty bread, to serve
Preparation

Toss sweet potatoes with oil.
Heat a grill pan on medium heat. Cook sweet potato slices for 4-5 mins each side, until tender. Set aside.
Place steak on a plate and (wearing rubber gloves) rub curry paste into both sides. Increase heat to medium-high. Cook steak for 3 mins each side. Let stand, covered with foil, for 10 mins.
Combine arugula, onion and sweet potato in a large bowl. Drizzle with vinegar and oil, and toss to combine. Slice meat diagonally across grain. Add to salad and toss gently to combine. Divide salad among serving plates and serve with crusty bread.
