Ingredients

2 None medium eggs, beaten
1/2 cup sugar
None pinch salt
2/3 cup dry white wine
1 1/4 cups flour
2/3 cup vanilla pudding mix
4 None eating apples, peeled, cored and sliced into rings
2 cups vegetable oil
2 tsp ground cinnamon
4 scoops vanilla ice cream
None None caramel sauce, to serve
None None mint leaves, to decorate
Preparation

For the batter, whisk the eggs with 1/4 cup of the sugar, the salt and wine. Stir in the flour and vanilla pudding mix. Set aside for 15 mins.
Pat the apple slices with paper towels to dry. Heat the oil in a saucepan. Dip the apple slices in the batter, then gently lower into the pan and fry in batches, turning occasionally. Lift out with a slotted spoon and drain on paper towels.
Mix the cinnamon and remaining sugar together on a plate and roll the apple slices in it. Arrange on serving dishes with the vanilla ice cream, drizzle with caramel sauce and decorate with mint.
