Udon Noodles With Spicy Ground Pork - cooking recipe

Ingredients
    2 lbs fresh udon noodles
    4 None spring onions, sliced diagonally
    1 tbsp sesame oil
    2 tbsp peanut or rice bran oil
    2 lbs ground pork
    2 tbsp Chinese rice wine or dry sherry
    1 tbsp grated ginger
    2 cloves garlic, peeled and crushed
    1/3 cup hoisin sauce
    2 tbsp chili black bean sauce
    1 tbsp soy sauce
    1 cup chicken stock
    None None diced cucumber, to serve
    None None cilantro leaves, to serve
Preparation
    Prepare noodles according to package instructions. Drain and toss with half of the spring onions and half the sesame oil.
    For the pork sauce, heat peanut oil in a wok over medium heat. Add pork and stir-fry 2-3 mins, until browned. Add wine and stir-fry 1 min, or until evaporated. Remove pork from wok and set aside. Add ginger, garlic and remaining spring onion to wok and stir-fry 30 seconds. Add sauces and stir-fry 30 seconds. Return pork to wok along with stock and bring to a boil. Reduce heat and simmer 10 mins, until thickened. Stir in remaining sesame oil. Serve noodles with pork sauce, cucumber and cilantro.
