Halibut With Olive Crust - cooking recipe
Ingredients

250 g spinach
1 None onion, peeled and finely diced
150 g tomatoes, sliced
50 g green and black olives, stoned
1 clove garlic
1 None lemon, finely peeled and juiced
None None olive oil
1 bunch basil, cut into strips (set aside some for garnish)
50 g breadcrumbs
750 g halibut fillet
Preparation

Heat 2 tbsp of the oil in a large skillet on medium heat. Cook the onion until softened. Add the spinach and season to taste. Remove and set aside. Process the olives and garlic in a small food processor until chopped. Add the breadcrumbs and lemon peel and process until blended. Pour into bowl. Stir in basil and season to taste. Heat 2 tbsp of the oil in the skillet. Cook the olive and breadcrumb mixture until crisp.
Preheat the oven to 400\u00b0F. Drizzle the fish with lemon juice and season it to taste. Line the bottom of a baking pan with slices of tomato with the spinach on top. Place the halibut on the spinach. Sprinkle with the olive and breadcrumb mixture.
Bake for about 20 mins. Halfway through, drizzle with remaining 2 tbsp oil. Serve on plates garnished with basil and additional lemon peel.
