Vegan Mixed Berry Cheesecake - cooking recipe

Ingredients
    4 oz soy butter
    5 tbsp cornstarch
    1/3 cup sugar
    1 tsp vanilla extract
    1 None lemon, grated zest
    7 oz firm tofu
    14 oz soft tofu
    3 oz frozen mixed berries
Preparation
    Preheat the oven to 350\u00b0F. Grease an 8 inch diameter springform pan. Melt the soy butter in a frying pan. Pour into a blender and add the cornstarch, sugar, vanilla extract, lemon zest and both tofus. Puree until creamy.
    Spoon into the pan, smooth out and spoon over the berries. Bake for 50 mins. Allow to cool, remove from the pan and transfer to a cake plate to serve.
