Meatloaf With Tomatoes And Basil - cooking recipe

Ingredients
    1 None stale bread roll
    1 tbsp sunflower oil, plus extra to grease
    1 None onion, finely diced
    1 lb ground beef
    1 lb ground pork
    2 tbsp wholegrain mustard
    1 None medium egg
    1 tbsp tomato puree
    3 tbsp finely chopped thyme leaves
    1/4 lb goat cheese, chopped
    1/2 lb cherry tomatoes
    1 tbsp basil pesto
    2 tbsp finely chopped basil
Preparation
    To make the meatloaf mixture, soak the bread in lukewarm water for 1 hour. Heat the oil in a frying pan, add the onion and saute for 2-3 mins. Squeeze out the bread then place in a large mixing bowl with the meat, onion, mustard, egg, tomato puree and thyme. Knead until smooth and season. Preheat the oven to 350\u00b0F.
    Transfer the meatloaf mixture to a greased loaf pan and press down. With your thumb, make indentations in the top of the loaf and insert pieces of goats cheese. Bake for 30 mins, then place the tomatoes on top and return to the oven for another 20-25 mins. Spread a little pesto on the tomatoes and sprinkle with basil to serve.
