Cheesy Veggie Pasta - cooking recipe

Ingredients
    3.5 oz short pasta of choice
    2 1/2 tbsp butter
    2 tbsp flour
    1/2 cup milk
    5 oz mixed frozen peas, corn and carrots
    1 oz baby spinach, roughly chopped
    1 None tomato, chopped
    3 oz Cheddar cheese, grated
    None None green salad, to serve
Preparation
    Preheat broiler. Cook pasta in boiling, salted water until al dente. Drain.
    Meanwhile, melt butter in a medium saucepan over high heat. Whisk in flour and cook, stirring, for 1 min. Gradually whisk in milk until smooth. Cook, stirring, for 1-2 mins, until mixture boils and thickens. Reduce heat and simmer for 3 mins. Fold in pasta, vegetables, tomato and 1/2 the cheese. Season to taste.
    Distribute mixture evenly between 4 ramekins and sprinkle with remaining cheese. Broil for 3-5 mins, until cheese is melted and golden. Serve hot with green salad.
