2 None egg whites
1 cup sugar
6 None passionfruits, pulp scooped out
Preparation

Beat egg whites in a small, clean dry bowl with an electric mixer until soft peaks form. Gradually add 1/2 cup of the sugar; beat until dissolved.
Half-fill a large, deep skillet with water and bring to a simmer on low heat.
Using 2 small metal spoons, shape meringue into 12 ovals. Slide into water; simmer for 2 mins each side. Using a slotted spoon, transfer snow eggs to a tray.
Place remaining 1/2 cup sugar and 1 cup water in a small saucepan on medium heat. Stir until sugar dissolves.
Add passionfruit pulp; bring to a boil. Reduce heat to low; simmer, uncovered, for 3 mins or until syrup thickens slightly.
Divide passionfruit syrup among 4 shallow serving bowls. Top with snow eggs. Serve.
