Marinated Mini Pork Skewers - cooking recipe

Ingredients
    1 clove garlic
    1 tsp salt
    4 tbsp olive oil
    1 tbsp lemon juice
    2 None lemons, sliced
    300 g courgettes, sliced
    1 stalk fresh sage
    2 None chilli peppers, cut in half lengthways
    500 g pork fillet, cut into large cubes
Preparation
    Preheat oven to 450\u00b0F. Using a mortar and pestle, crush the garlic with 1 tsp salt. Mix in the olive oil and lemon juice then use to marinate the meat for 2 hours.
    Place the meat on small wooden skewers with the lemon, zucchini, sage leaves and peppers. Place on a baking tray and bake for 10-12 minutes.
